Purchasing this option may help reduce your exposure to sodium nitrates. However, bacon made without nitrates is more prone to spoilage and lacks the pinker color of regular smoked bacon. You should keep nitrate-free bacon refrigerated below 40 degrees Fahrenheit at all times to retard spoilage.
