With an increasing awareness of the potential dangers of sodium nitrate and added sugars, we offer a nitrate/ nitrite-free, sugar-free version of our bacon. However, bacon made without nitrates is more prone to spoilage and lacks the pinker color of regular smoked bacon. You should keep nitrate-free bacon refrigerated below 40 degrees Fahrenheit at all times to retard spoilage.
